Turn up the heat with these Shrimp Mango Nachos, where zesty spice meets sweet, juicy mango atop a bed of a crisp Fresh Express® Orange Sesame Salad mix. A little smoky, a little tangy, and completely irresistible.

Ingredients
  

  • 1 (11.5-ounce) Fresh Express® Orange Sesame Chopped Salad Kit
  • 1 lb raw shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp chipotle powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • 1 bag tortilla chips 
  • 1 cup shelled edamame 
  • 1 large mango, diced
  • 1 avocado, diced
  • 2 green onions, thinly sliced
  • 1 jalapeño, thinly sliced 

Chipotle Lime Crema

  • ½ cup sour cream or Greek yogurt
  • ½–1 tsp chipotle powder (to taste)
  • Juice of 1 lime
  • Pinch of salt

Instructions
 

  • In a bowl, toss shrimp with olive oil, chili powder, chipotle powder, cumin, garlic powder, salt, and pepper.
  • Heat a skillet over medium-high. Cook shrimp 2–3 minutes per side until pink and cooked through. Keep shrimp whole.
  • In a small bowl, whisk together sour cream, chipotle powder, lime juice, and salt until smooth.
  • Toss the Fresh Express® Orange Sesame Chopped Salad Kit greens lightly with half the orange sesame dressing and toppings.
  • Spread tortilla chips on a large platter. Layer with orange sesame salad kit, edamame, mango, avocado, and whole shrimp.
  • Drizzle with rest of the dressing and chipotle lime crema.
  • Top with green onion, jalapeño
