Rotisserie Chicken Cobb Salad
Recipe by Ronnie Woo – Rotisserie Chicken Cobb Salad
This quick and easy recipe utilizes a store-bought rotisserie chicken to create a colorful and show-stopping salad. Layers of chicken, avocado, soft-boiled eggs, tomatoes, crumbled feta, and the Fresh Express® Bacon Thousand Island Chopped Kit all come together in this beautiful and hearty salad.
Ingredients
- 1 (9.9-ounces) package Fresh Express® Bacon Thousand Island Chopped Kit™
- 3 large eggs
- 1 cup shredded store-bought rotisserie chicken
- 1 cup cherry tomatoes, halved
- ½ large avocado, peeled, pitted, and diced
- ¼ cup crumbled Feta cheese
- Kosher salt
- Freshly ground black pepper
Instructions
- Bring a pot of water to a rolling boil, then reduce to a gentle boil. Carefully lower the eggs into the hot water with a spoon and let simmer for 7 minutes. Prepare an ice bath. When the eggs are done cooking, immediately chill the eggs in the ice bath for 3 to 5 minutes. Peel the eggs, slice in half, and set aside.
- In a large mixing bowl, combine all of the components from the Fresh Express® Bacon Thousand Island Chopped Kit™ except for half of the dressing packet (reserving for later). Gently toss everything together until combined.
- Top with the shredded chicken, cherry tomatoes, avocado, and crumbled feta.
- Drizzle with the remaining dressing, according to your preference, and sprinkle with salt and ground black pepper. Serve and enjoy!
