Recipe by Steph Grasso - Shrimp Mango Nachos with Orange Sesame Salad
Turn up the heat with these Shrimp Mango Nachos, where zesty spice meets sweet, juicy mango atop a bed of a crisp Fresh Express® Orange Sesame Salad mix. A little smoky, a little tangy, and completely irresistible.

- 1 (11.5-ounce) Fresh Express® Orange Sesame Chopped Salad Kit
- 1 lb raw shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp chipotle powder
- ½ tsp cumin
- ½ tsp garlic powder
- Salt and pepper, to taste
- 1 bag tortilla chips
- 1 cup shelled edamame
- 1 large mango, diced
- 1 avocado, diced
- 2 green onions, thinly sliced
- 1 jalapeño, thinly sliced
Chipotle Lime Crema
- ½ cup sour cream or Greek yogurt
- ½–1 tsp chipotle powder (to taste)
- Juice of 1 lime
- Pinch of salt
In a bowl, toss shrimp with olive oil, chili powder, chipotle powder, cumin, garlic powder, salt, and pepper.
Heat a skillet over medium-high. Cook shrimp 2–3 minutes per side until pink and cooked through. Keep shrimp whole.
In a small bowl, whisk together sour cream, chipotle powder, lime juice, and salt until smooth.
Toss the Fresh Express® Orange Sesame Chopped Salad Kit greens lightly with half the orange sesame dressing and toppings.
Spread tortilla chips on a large platter. Layer with orange sesame salad kit, edamame, mango, avocado, and whole shrimp.
Drizzle with rest of the dressing and chipotle lime crema.
Top with green onion, jalapeño
