Ingredients

  • 1 (9.9-ounces) package Fresh Express® Bacon Thousand Island Chopped Kit™
  • 3 large eggs
  • 1 cup shredded store-bought rotisserie chicken
  • 1 cup cherry tomatoes, halved
  • ½ large avocado, peeled, pitted, and diced
  • ¼ cup crumbled Feta cheese
  • Kosher salt
  • Freshly ground black pepper

Instructions

  • Bring a pot of water to a rolling boil, then reduce to a gentle boil. Carefully lower the eggs into the hot water with a spoon and let simmer for 7 minutes. Prepare an ice bath. When the eggs are done cooking, immediately chill the eggs in the ice bath for 3 to 5 minutes. Peel the eggs, slice in half, and set aside.
  • In a large mixing bowl, combine all of the components from the Fresh Express® Bacon Thousand Island Chopped Kit™ except for half of the dressing packet (reserving for later). Gently toss everything together until combined.
  • Top with the shredded chicken, cherry tomatoes, avocado, and crumbled feta.
  • Drizzle with the remaining dressing, according to your preference, and sprinkle with salt and ground black pepper. Serve and enjoy!
