Recipe by Ronnie Woo - Rotisserie Chicken Cobb Salad
This quick and easy recipe utilizes a store-bought rotisserie chicken to create a colorful and show-stopping salad. Layers of chicken, avocado, soft-boiled eggs, tomatoes, crumbled feta, and the Fresh Express® Bacon Thousand Island Chopped Kit all come together in this beautiful and hearty salad.

- 1 (9.9-ounces) package Fresh Express® Bacon Thousand Island Chopped Kit™
- 3 large eggs
- 1 cup shredded store-bought rotisserie chicken
- 1 cup cherry tomatoes, halved
- ½ large avocado, peeled, pitted, and diced
- ¼ cup crumbled Feta cheese
- Kosher salt
- Freshly ground black pepper
Bring a pot of water to a rolling boil, then reduce to a gentle boil. Carefully lower the eggs into the hot water with a spoon and let simmer for 7 minutes. Prepare an ice bath. When the eggs are done cooking, immediately chill the eggs in the ice bath for 3 to 5 minutes. Peel the eggs, slice in half, and set aside.
In a large mixing bowl, combine all of the components from the Fresh Express® Bacon Thousand Island Chopped Kit™ except for half of the dressing packet (reserving for later). Gently toss everything together until combined.
Top with the shredded chicken, cherry tomatoes, avocado, and crumbled feta.
Drizzle with the remaining dressing, according to your preference, and sprinkle with salt and ground black pepper. Serve and enjoy!
