Ghoul-ten-Free Korean BBQ Cauliflower Bites with Orange Sesame
Oven-crisp cauliflower (gluten-free) tossed in a sticky gochujang BBQ glaze meets a bright citrus-sesame salad from the Fresh Express® Orange Sesame Chopped Kit™ – big flavor, no deep fryer.
Ingredients
- 1 (11.5-ounce) package Fresh Express® Orange Sesame Chopped Kit™
- 1 large head cauliflower, cut into 1½-inch florets
- 2 large eggs, beaten
- ½ cup cornstarch
- ¾ cup gluten-free panko breadcrumbs
- 2 tbsp vegetable oil
- 3 tbsp gluten-free gochujang
- 2 tbsp gluten-free tamari (instead of soy sauce)
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp grated fresh ginger
- 1 tsp minced garlic
- Salt and black pepper
Instructions
- Preheat oven to 350 degrees F. In a large bowl, combine pepper jack, enchilada sauce, rotisserie chicken, cream cheese, green chilis, and taco seasoning.
- Transfer dip to a cast-iron skillet and bake until warmed through and bubbly, 20 to 25 minutes.
- Prep tortilla graves (or other spooky shapes) while dip is cooking. Cut tortillas into grave shapes and place on a baking sheet. Bake until sturdy, 5 to 7 minutes.
- In a large bowl, prepare the Fresh Express® Southwest Chopped Kit® by tossing the greens with half of the included dressing and all of toppings. Set remaining dressing to the side.
- Remove dip from oven and let cool for 5 minutes.
- Top dip with Southwest Salad kit, insert graves and then drizzle with remaining salad dressing. Serve with tortilla chips. Enjoy!
