Salmon Slaw Tacos
Fresh Express® 3 Color Coleslaw™ adds extra crunch and flavor to these fabulous salmon tacos. Enjoy this easy, super satisfying meal!
Ingredients
- 1 (24-ounce) package Fresh Express® 3 Color Coleslaw™
- 1/3 cup crema fresca or light sour cream
- Juice from 1 lime
- 1/2 teaspoon salt
- 4 salmon fillets (about 4 ounces each)
- 8 corn tortillas, warmed
- Prepared salsa
- Fresh cilantro, optional
Instructions
- Mix the crema fresca, lime juice, and salt in a bowl.
- Place the Fresh Express® 3 Color Coleslaw™ in a large bowl. Drizzle with the crema fresca mixture; toss to coat.
- Cover and refrigerate for at least 20 minutes to allow flavors to develop. Heat an indoor or outdoor grill to medium-high; oil the grill grate. Grill salmon for four to six minutes a side, or until it flakes easily with a fork.
- To serve, place slaw down the middle of the tortilla, top with a piece of salmon, salsa and cilantro, if desired.
Notes
Mexican crema fresca is slightly tangy but thicker and richer than American sour cream.
