This Crispy Quinoa Sweet Kale Salad is a big, bold salad packed with tons of flavor and textures. Using the Fresh Express® Sweet Kale Chopped Salad Kit as the base of the recipe, with added ingredients of rotisserie chicken, crumbled feta, pickled onions and crispy quinoa, this is an unforgettable recipe you will make on repeat.
Ingredients
- 2 bags Fresh Express® Sweet Kale Chopped Salad Kits
- 1 cup rotisserie chicken, chopped
- 3/4 cup feta cheese, crumbled
- 3/4 cup pickled onions
- 3/2 cups cooked quinoa
- 2 tsp olive oil
- Pinch of sea salt
Instructions
- Cook quinoa according to package instructions and set aside to cool.
- Preheat the oven to 375°F. Spread quinoa onto a baking sheet and toss lightly with olive oil and a pinch of salt. Bake for 20-25 minutes or until the quinoa is crispy and golden, then set aside.
- Pour the salad mix contents of the Fresh Express® Sweet Kale Chopped Salad Kits into a large bowl.
- Add the chicken, feta, pickled onions, dried cranberries/pumpkin seed mixture (from the Fresh Express salad bag), and crispy quinoa.
- Toss with both packages of poppyseed dressing and enjoy!
