- 2 (5-ounce) packages Fresh Express® Butter Supreme
- 8 ounces imitation crabmeat
- 3 tablespoons mayonnaise
- 2 tablespoons diced red pepper
- 3 teaspoons lemon juice
- 1/2 cup dried cherries
- 1/3 cup slivered almonds, toasted
Lemon Vinaigrette Ingredients:
- 2 tablespoons fresh lemon juice
- 6 tablespoons olive oil
- 1/2 teaspoon sugar
- 1/8 teaspoon salt
- Mix the crabmeat, mayonnaise, red pepper, and lemon juice in a bowl.
- Divide the Fresh Express® Butter Supreme lettuce evenly among four plates. Drizzle with Lemon Vinaigrette. Sprinkle with dried cherries and almonds.
- Top with crabmeat mixture. Serve with crackers, if desired.
Lemon Vinaigrette Instructions:
- Whisk all ingredients in a small bowl.
Lump crabmeat can also be used.
