Halloween Pepper Salad
These ghoulishly delicious stuffed bell peppers with the Fresh Express® Creamy Goddess Chopped Kit® make a tasty and healthy Halloween meal.
Ingredients
- 1 (11-ounce) package Fresh Express® Creamy Goddess Chopped Kit™
- 4 large bell peppers, red, yellow, and orange
- 1 cup chickpeas, rinsed, drained
- 1/2 cup black beans, rinsed, drained
Instructions
- Cut the top off the peppers; remove the core and seeds, keeping pepper intact.
- Carve a mouth and eyes into one side of the pepper to make a spooky Halloween salad.
- Place the greens from the Fresh Express® Creamy Goddess Chopped Kit™ into a large bowl; toss with the salad dressing. Add the toppings, chickpeas, and black beans; toss to combine.
- Fill the peppers with the salad.
