Crispy Skillet Latke with Sweet Kale Salad
Take a new approach to traditional latkes by making a large one with tater tots in a skillet. Then top it with the Fresh Express® Sweet Kale Chopped Kit® drizzled with poppyseed dressing.

Ingredients
- 2 packages Fresh Express® Sweet Kale Chopped Kits® (10.9-ounce)
- 1 medium onion cut in half, thinly sliced
- 6 tablespoons olive oil divided
- 10 large eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 package tater tots (32-ounce)б thawed
Instructions
- Heat oven to 450°F; place rack in the middle of the oven.
- Cook onion in 2 tablespoons olive oil in a 10-inch oven proof skillet over medium heat for 10 minutes or until tender and lightly browned. Remove from skillet; cool slightly. Clean the skillet.

- Heat 1/4 cup olive oil in the skillet over medium-high heat until oil is shimmering. Pour egg mixture into the skillet; press the top with a spatula to create an even layer.
- Bake for 15 minutes or until edges are crisp. Turn broiler to high (do not remove skillet from oven); broil for 4 to 5 minutes or until top is golden brown. Remove from oven and let sit for 5 minutes.
- Wearing oven mitts, place a round platter on top of skillet; invert the pan to transfer latke to platter.
- Place the greens from the Fresh Express® Sweet Kale Chopped Kits® into a large bowl; toss with salad dressings. Add toppings; toss to combine.
- Serve the latke topped with half of the Sweet Kale salad; serve remaining salad on the side.
