Chicken Enchilada Salad

Zesty enchilada sauce flavors our Lettuce Trio, along with shredded chicken, cheese, avocado and cucumber.

Ingredients
  

  • 1 package Fresh Express Lettuce Trio
  • 1 avocado sliced
  • 1 basket cherry tomatoes cut in half
  • 1 cucumber cut into small cubes
  • 1 cup mixed yellow and white cheese grated
  • 2 green onions sliced thinly
  • 2 chicken breasts cooked to internal temp of 165 degrees F, and hand-shredded
  • 1/2 cup canned enchilada sauce
  • Your favorite creamy Ranch or Buttermilk dressing

Instructions
 

  • In a separate bowl, toss chicken with enchilada sauce.
  • Set aside for 10 minutes.
  • Empty greens into a large salad bowl.
  • Add in tomatoes, cucumber, avocado and green onions, and toss together.
  • Place mixed salad onto four individual plates.
  • Top the salad with the enchilada chicken.
  • Sprinkle 1/4 cup cheese on top of each salad.
  • Drizzle on your favorite creamy dressing.
