  • Thinly slice the Bird’s Eye chili.
  • In a bowl, whisk soy sauce and brown sugar until the sugar dissolves. Whisk in the chili, then slowly whisk in the oil until combined.
  • Add chicken thighs and turn to coat. Marinate 20 minutes.
  • Heat a large skillet over medium-high. Remove chicken from the marinade, letting excess drip off. Cook 3–4 minutes until nicely browned, flip, then reduce heat to medium-low and cover. Cook 10–15 minutes until the thickest part reaches 165°F.
  • Transfer chicken to a cutting board and rest 5 minutes, then slice.

  • Divide salad among plates and top with sliced chicken.
