Thai’n’Cashews Chicken Thigh Salad

Ingredients
- 1 (11.7-ounce) package Fresh Express® Thai ’n’ Cashews Chopped Salad Kit
- 4 chicken thighs
- ½ cup soy sauce
- 2 tbsp brown sugar
- 1 Bird’s Eye chili
- ¼ cup neutral oil
Instructions
- Thinly slice the Bird’s Eye chili.
- In a bowl, whisk soy sauce and brown sugar until the sugar dissolves. Whisk in the chili, then slowly whisk in the oil until combined.
- Add chicken thighs and turn to coat. Marinate 20 minutes.
- Heat a large skillet over medium-high. Remove chicken from the marinade, letting excess drip off. Cook 3–4 minutes until nicely browned, flip, then reduce heat to medium-low and cover. Cook 10–15 minutes until the thickest part reaches 165°F.
- Transfer chicken to a cutting board and rest 5 minutes, then slice.
- Add the greens from the Fresh Express® Thai ’n’ Cashews Chopped Salad Kit to a large bowl, drizzle with the dressing from the kit, and toss to lightly coat. Sprinkle with the crunchy toppings.
- Divide salad among plates and top with sliced chicken.
