Take the taste of victory with you on the go by making these delicious Game Day Walking Tacos with chicken and Fresh Express® Twisted Enchilada Caesar Chopped Salad Kit®.
Ingredients
- 1 (9.6-ounce) package Fresh Express® Twisted Enchilada Caesar Chopped Salad Kit®
- 1 pound boneless skinless chicken breast
- 2 cups chicken stock
- 1 onion
- 1 avocado
- 1 bunch of fresh cilantro
- 1 tomato
- 2 tablespoons of diced chipotle in adobo
Instructions
- In a pan over medium heat sear chicken until golden brown.
- Add in chicken stock, cover and simmer.
- When chicken is cooked to internal temperature of 165° F shred and continue cooking until stock is reduced to a sauce consistency.
- Layer salad, tomatoes, onions, and avocado in a cup and top with chicken.
- Garnish with cilantro and serve.
