Recipe by Alia & Radwa Elkaffas – Maroulosalata Salad
This Maroulosalata is a crisp and refreshing Greek-inspired salad that comes together in minutes. The butter lettuce is light and tender, perfectly balanced with crunchy cucumbers, fresh dill, and tangy feta. Tossed in a simple lemon-olive oil dressing, it’s a bright and flavorful side dish you’ll want to make again and again.
Ingredients
- 1 (6-ounces) bag Fresh Express® Sweet Butter™
- 2–3 green onions, thinly sliced
- 1 cup Persian cucumbers, thinly sliced into half-moons
- ⅓ cup fresh dill, chopped
- 6 oz block feta cheese
Dressing:
- ⅓ cup extra-virgin olive oil
- 4 tablespoons fresh lemon juice, approx. juice of 1 large lemon
- 2 small garlic cloves, grated
- 1 teaspoon Dijon mustard
- 1 teaspoon sea salt, to taste
- ½ teaspoon black pepper, to taste
Instructions
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, garlic, Dijon mustard, salt, and pepper until emulsified.
- Assemble the salad: Place the lettuce in a large serving bowl. Add the green onions, cucumber, dill.
- Dress and toss: Pour as little or as much of the dressing over the salad just before serving and gently toss to combine.
- Crumble the Feta: over the salad.
- Serve: Enjoy immediately as a crisp and refreshing side dish to grilled meats, fish, or your favorite Mediterranean mains.
Tips & Tricks:
- For extra crunch, add thinly sliced radishes or toasted pine nuts.
- If you like a creamier dressing, whisk in a spoonful of Greek yogurt.
