Pulled BBQ Chicken Sandwich with Bacon Thousand Island Chopped Salad
The Fresh Express® Bacon Thousand Island Chopped Kit® is more than a salad. It makes a delicious topping for barbecue chicken, burgers, and just about any sandwich!
Ingredients
- 3 (9.4-ounce) packages Fresh Express® Bacon Thousand Island Chopped Kits®
- 1-1/2 cups mesquite barbecue sauce
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 yellow onion, peeled,halved, thinly sliced
- 2 pounds boneless skinless chicken breasts
- 12 hamburger buns
Instructions
- Mix the barbecue sauce, apple cider vinegar, brown sugar, onion powder, garlic powder, salt and pepper in a small bowl.
- Place the onion in the bottom of a slow cooker; top with chicken breasts. Pour the sauce over the chicken. Cook on high for 3 hours or on low for 5 to 6 hours or until chicken is tender. Remove the chicken and shred with two forks; place shredded chicken back in the sauce and mix well.
- Place the Fresh Express® Bacon Thousand Island Chopped Kits® into a large bowl; toss with the salad dressing. Add the toppings; toss to combine.
- To make one sandwich, place 1/2 cup pulled chicken on the bottom bun; top with 1/4 cup Bacon Thousand Island Chopped Kit® and top of bun. Serve with additional Bacon Thousand Island Chopped Kit® on the side.
