Cinco de Mayo Empanadas with a Creamy Goddess Salad
Celebrate Cinco de Mayo with flaky, golden empanadas filled with ground turkey, paired with our Creamy Goddess Chopped Salad Kit. It’s an easy, flavor-packed meal that brings festive, Mexican-inspired flavor to the table.
Ingredients
- 1 (11-ounce) package Fresh Express® Creamy Goddess Chopped Salad Kit
- 1/2 lb ground turkey
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 package refrigerated empanada dough (or use small round pie crusts)
- 1 egg beaten (for egg wash)
Instructions
- Preheat oven to 400°F.
- In a skillet, cook onion and garlic over medium heat until softened. Add ground turkey, cumin, salt, and pepper; cook until browned and cooked through. Let cool slightly.
- Spoon turkey mixture onto one half of each dough circle. Fold over and seal edges with a fork. Brush tops with egg wash.
- Bake for 15–18 minutes or until golden brown.
- Meanwhile, toss all ingredients from Fresh Express® Creamy Goddess Chopped Salad Kit until well combined.
- Serve the warm empanadas with the creamy, flavorful salad on the side for a satisfying and complete meal.
