Mediterranean Grain Bowl
A fresh take on a classic! Perfectly steamed grains meet the crisp crunch of Fresh Express® Mediterranean Herb Chopped Salad Kit™, crispy falafel, and red pepper hummus. This is a perfect meal to carry with you on the go for a hearty snack or healthy lunch.
Ingredients
- 1 bag Fresh Express® Mediterranean Herb Chopped Salad Kit®
- 2 cups cooked farro
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 4 falafel patties, crumbled
- ½ cup feta cheese
- ½ cup red pepper hummus
Instructions
- Boil 4 cups of salted water in a pot. Add 2 cups of farro to the boiling water and reduce the heat to a simmer. Cook until the farro for about 15 to 20 minutes or until it is tender or al dente. Drain the farro through a strainer and rinse it with cool water to stop the cooking process. Fluff the grains with a fork and set to the side.
- Mix falafel according to the instructions on the package, form into patties, then cook the falafel according to the directions. Set aside to cool, then crumble.
- Mix the Mediterranean Herb Chopped Salad kit by tossing the greens with the included dressing and toppings.
- Assemble bowls starting with red pepper hummus, then add farro, falafel crumbles, tomatoes, and cucumber.
- Top with Fresh Express® Mediterranean Herb Chopped Salad.
