Mediterranean Grain Bowl
A fresh take on a classic! Perfectly steamed grains meet the crisp crunch of Fresh Express® Mediterranean Herb Chopped Salad Kit™, crispy falafel, and red pepper hummus. This is a perfect meal to carry with you on the go for a hearty snack or healthy lunch.
Ingredients
- 1 bag Fresh Express® Mediterranean Herb Chopped Salad Kit
- 2 cups cooked farro
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, slicedÂ
- 4 falafel patties, crumbled
- ½ cup feta cheese
- ½ cup red pepper hummus
Instructions
- Bring a large pot of salted water to a boil, 6–8 cups. Add 2 cups farro, reduce to a steady simmer, and cook 15–20 minutes until tender but slightly chewy. Drain in a fine-mesh strainer, rinse briefly with cool water to stop the cooking, shake dry, fluff with a fork, and set aside.
- Mix falafel according to the instructions on the package, form into patties, then cook the falafel according to the directions. Set aside to cool, then crumble.
- Add the greens from the Fresh Express® Mediterranean Herb Chopped Kit to a large bowl, drizzle with the dressing from the kit, and toss to lightly coat. Sprinkle with the crunchy toppings.
- Divide the prepared salad among bowls. Add a spoonful of red pepper hummus, then top with farro, falafel crumbles, tomatoes, and cucumber. Enjoy!
