Mediterranean Grain Bowl

  • Bring a large pot of salted water to a boil, 6–8 cups. Add 2 cups farro, reduce to a steady simmer, and cook 15–20 minutes until tender but slightly chewy. Drain in a fine-mesh strainer, rinse briefly with cool water to stop the cooking, shake dry, fluff with a fork, and set aside.
  • Mix falafel according to the instructions on the package, form into patties, then cook the falafel according to the directions. Set aside to cool, then crumble.
  • Add the greens from the Fresh Express® Mediterranean Herb Chopped Kit to a large bowl, drizzle with the dressing from the kit, and toss to lightly coat. Sprinkle with the crunchy toppings.
  • Divide the prepared salad among bowls. Add a spoonful of red pepper hummus, then top with farro, falafel crumbles, tomatoes, and cucumber. Enjoy!
