Mediterranean Grain Bowl

  • Boil 4 cups of salted water in a pot. Add 2 cups of farro to the boiling water and reduce the heat to a simmer.  Cook until the farro for about 15 to 20 minutes or until it is tender or al dente.  Drain the farro through a strainer and rinse it with cool water to stop the cooking process. Fluff the grains with a fork and set to the side.
  • Mix falafel according to the instructions on the package, form into patties, then cook the falafel according to the directions. Set aside to cool, then crumble.
  • Mix the Mediterranean Herb Chopped Salad kit by tossing the greens with the included dressing and toppings.
  • Assemble bowls starting with red pepper hummus, then add farro, falafel crumbles, tomatoes, and cucumber.
  • Top with Fresh Express® Mediterranean Herb Chopped Salad.
