Mediterranean Grain Bowl

Boil 4 cups of salted water in a pot. Add 2 cups of farro to the boiling water and reduce the heat to a simmer. Cook until the farro for about 15 to 20 minutes or until it is tender or al dente. Drain the farro through a strainer and rinse it with cool water to stop the cooking process. Fluff the grains with a fork and set to the side.
Mix falafel according to the instructions on the package, form into patties, then cook the falafel according to the directions. Set aside to cool, then crumble.
Mix the Mediterranean Herb Chopped Salad kit by tossing the greens with the included dressing and toppings.
Assemble bowls starting with red pepper hummus, then add farro, falafel crumbles, tomatoes, and cucumber.
