Enchilada Caesar California Steak Burrito

Ingredients
- 1 (9.6-ounce) package Fresh Express® Twisted Enchilada Caesar Chopped Salad Kit®
- 1 pound skirt steak
- 1 lime
- 1 burrito sized tortilla
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 red potato
- 1/4 large red onion diced
- 2 tablespoons neutral oil
Instructions
- Cut 1 red potato into matchsticks and small dice 1/4 of a red onion. Heat 1 tablespoon of oil in a pan over medium heat. Add the potatoes and sauté until they turn golden brown. Stir in the onions and cook briefly until softened. Squeeze half of a lime over the mixture, stir, and remove from heat.
- Heat 1 tablespoon of oil in a hot skillet. Season both sides of the skirt steak with salt and black pepper. Cook the steak to your desired temperature, searing each side for a flavorful crust. Let the steak rest for a few minutes, then slice into 1/2-inch pieces.
- In a bowl toss together the salad.
- Warm up a burrito-sized tortilla. Layer with Fresh Express® Enchilada Caesar Salad, the sliced steak, potato-onion mixture, and cheese. Fold the sides in and roll tightly to form a burrito.
- Place the burrito seam-side down in a hot pan to seal and crisp the exterior.
- Slice in half and enjoy!
