Cut 1 red potato into matchsticks and small dice 1/4 of a red onion. Heat 1 tablespoon of oil in a pan over medium heat. Add the potatoes and sauté until they turn golden brown. Stir in the onions and cook briefly until softened. Squeeze half of a lime over the mixture, stir, and remove from heat.
