Fresh Express® Iceberg Shreds® make the perfect base to turn a traditional Reuben sandwich into a delicious salad.

Ingredients
  

  • 1 (8-ounce) package Fresh Express® Iceberg Shreds®
  • slices  rye bread; cut into 1/2-inch cubes
  • cups  sauerkraut,  rinsed and drained
  • dill pickles, chopped
  • 1/2  cup  Thousand Island Dressing
  • 8 ounces shaved turkey breast
  • 5 ounces  shredded Swiss cheese

Instructions
 

  • Heat oven to 350°F. Place bread on a baking sheet; bake for 15 minutes or until bread is toasted.
  • Combine the Fresh Express® Iceberg Shreds®, sauerkraut, and pickles in a large bowl. Drizzle with dressing and toss to coat. 
  • Divide salad evenly onto four plates.
  • Top with turkey, cheese, and rye croutons.
