Apple Cinnamon Baked Oatmeal Cups

  • 2 cups Chiquita Bites®: Juicy Red Apples, diced
  • 3 cups old fashioned rolled oats
  • 1/2 cup brown sugar
  • 1-1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 cup milk (dairy or nondairy)
  • 1/2 cup pure maple syrup


  • Heat oven to 350°F. Spray 12 regular-sized muffin cups with cooking spray.
  • Combine the oats, brown sugar, cinnamon, baking powder, nutmeg, and salt in a bowl. Add eggs, milk, and maple syrup; mix well. Let sit for 10 minutes or until liquid is partially absorbed. Stir in apples.
  • Fill muffin cups with batter.
  • Bake for 25 to 30 minutes or until a tester inserted into the center comes out clean and the edges are golden brown. Let sit on a wire rack to cool for 20 minutes before removing from cups; serve warm.


Tip: Extra muffins can be kept in the freezer for several weeks. When ready to use, thaw and warm them in the microwave.
