  • 2 (5-ounce) packages Fresh Express® Spinach & Arugula
  • 8 cups watermelon, cut into 3/4-inch cubes
  • 1 (8-ounce) package feta cheese chunk, cut into ½-inch cubes
  • 2 cups blueberries

Lime Mint Vinaigrette Ingredients:

  • 2/3 cup olive oil
  • Zest from 1 lime
  • 1/2 cup lime juice
  • 2 tablespoons honey
  • 3 tablespoons mint leaves, minced
  • 1/4 teaspoon salt


  • Arrange the Fresh Express® Spinach & Arugula on a large rectangular platter.
  • Place the blueberries in the upper left corner, creating a 4-inch square. Be sure to have enough spinach underneath to keep the berries from rolling off the edge.
  • Arrange the watermelon and feta in alternating rows, beginning and ending with watermelon. There will be three rows of watermelon and two rows of cheese.
  • Serve the salad with Lime Mint vinaigrette on the side.

Lime Mint Vinaigrette Instructions:

  • Whisk all ingredients in a small bowl.
