Turkey Reuben Salad
Fresh Express® Iceberg Shreds® make the perfect base to turn a traditional Reuben sandwich into a delicious salad.
Ingredients
- 1 (8-ounce) package Fresh Express® Iceberg Shreds®
- 2 slices rye bread; cut into 1/2-inch cubes
- 2 cups sauerkraut, rinsed and drained
- 2 dill pickles, chopped
- 1/2 cup Thousand Island Dressing
- 8 ounces shaved turkey breast
- 5 ounces shredded Swiss cheese
Instructions
- Heat oven to 350°F. Place bread on a baking sheet; bake for 15 minutes or until bread is toasted.
- Combine the Fresh Express® Iceberg Shreds®, sauerkraut, and pickles in a large bowl. Drizzle with dressing and toss to coat.
- Divide salad evenly onto four plates.
- Top with turkey, cheese, and rye croutons.
