Thai Chicken Noodle Salad
It’s easy to make a restaurant quality Thai dish with the Fresh Express® Thai ‘N’ Cashews Chopped Kit®. Just purchase prepared sweet potato noodles, prepared rotisserie chicken and steam some broccoli and this meal comes together quickly.
Ingredients
- 2 (11.7-ounce) packages Fresh Express® Thai ‘N’ Cashews Chopped Kits®
- 1 quart broccoli florets
- 1 (20-ounce) package sweet potato noodles
- 2 tablespoons canola oil
- 1/2 teaspoon salt
- 2 tablespoons brown sugar
- 2 cups cooked chicken, shredded
Instructions
- Cook broccoli in a vegetable steamer for 10 minutes or until florets are tender; set aside.
- Meanwhile, cook sweet potato noodles in oil in a nonstick skillet for 5 minutes, or until slightly softened.
- Sprinkle with salt and brown sugar; mix well. Add 1 tablespoon water; cook for an additional 2 to 3 minutes, or until tender.
- Place greens from the Fresh Express® Thai ‘N’ Cashews Chopped Kits® into a large bowl; toss with salad dressings, reserving two tablespoons.
To Assemble:
- Divide sweet potato noodles evenly among four bowls.
- Top with Thai ‘N’ Cashews Chopped Kit®, broccoli and chicken.
- Drizzle with reserved dressing; sprinkle with salad toppings.
