Smokehouse Succotash Salad

We’ve combined classic flavors with our Fresh Express® Smokehouse Chopped Salad and created a unique dish bursting with deliciousness. This salad will be the star of the dinner table.

  • 2 (10.5-ounce) packages Fresh Express® Smokehouse Chopped Kits®
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon pepper
  • 1 small shallot, finely chopped
  • 1 (8-ounce) package cherry tomatoes, cut in half
  • 8 ounces green beans, trimmed and cut on the bias into 1-inch pieces
  • 4 ears corn on the cob, husks and silk removed
  • 2 medium-sized zucchini, cut in half lengthwise
  • 1 teaspoon barbecue seasoning


  • Heat an indoor or outdoor grill to medium-high. 
  • Combine lemon juice, 2 tablespoons olive oil, 1/4 teaspoon salt, and pepper in a large bowl. Add shallot, tomatoes, and green beans; toss well. 
  • Drizzle zucchini with 1 tablespoon olive oil; sprinkle with 1/4 teaspoon salt.
  • Grill zucchini, cut side down, for 3 to 4 minutes, or until lightly charred; turn over and cook for 1 minute. Cool. 
  • Grill corn for 10 minutes or until lightly charred on all sides. Cool.
  • Cut zucchini in half lengthwise, then chop into 1/2-inch-thick pieces. Cut corn off the cob.
  • Add zucchini and corn to green bean mixture; toss to combine. Sprinkle with barbecue seasoning. Marinate for 30 minutes; drain marinade.
  • Place the greens from the Fresh Express® Smokehouse Chopped Kits® onto a large platter.  Place the vegetables on top of the greens. Sprinkle with the toppings. 
  • Once salad is served, drizzle each portion with the dressing from the chopped kits.
