Santa Fe Flank Steak Salad
Grilled flank steak marinated in zesty spices served with corn, tomatoes, and onion, on the Fresh Express® Caesar Supreme® Salad Kit makes a tasty entrée salad.
Ingredients
- 2 (10.5-ounce) packages Fresh Express® Caesar Supreme® Salad Kits®
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons garlic powder
- 2 teaspoons salt
- 2 teaspoons black pepper
- Pinch cayenne pepper
- 2 tablespoons olive oil
- 2 pounds flank steak
- 2 ears corn on the cob, husks and silk removed
- 1 (10-ounce) package cherry tomatoes, cut in half
- 1 medium red onion, thinly sliced
Instructions
- Combine paprika, chili powder, cumin, garlic powder, salt, peppers, and olive oil in a small bowl; mix well. Place flank steak into a 13x9x2-inch baking pan; drizzle with the olive oil mixture, turning to coat well. Marinate for 30 minutes, turning once.
- Heat an indoor or outdoor grill to high; oil the grill grate.
- Grill steak for four to five minutes a side or until meat reaches desired doneness (medium-rare is very pink in the center; medium is light pink in the center; well-done is brown throughout). Let sit for 10 minutes; cut into 1/4-inch thick slices.
- Oil the grill again. Grill corn for 10 minutes, turning often, until charred on all sides. Cut the corn from the cob.
- Place the lettuce from the Fresh Express® Caesar Supreme® Salad Kits® into a large bowl; toss with the salad dressings. Add the toppings, corn, cherry tomatoes, and onions; toss to combine.
- Divide salad evenly onto four plates; top with steak.
