- Fresh Express Spring Mix
- 1 cup frozen corn, blanched
- 1/2 small red onion, peeled and thinly sliced
- 1 cup cherry tomatoes, halved
- Meat from a 1.5 lb raw lobster, cooked and cubed
- 1/2 avocado, diced
- In a large mixing bowl combine spring mix, corn, onion and tomatoes with the dressing.
- Arrange salad onto three plates. Top each salad with lobster and avocado.
- 2 Tablespoons crème fraiche
- 2 Tablespoons nonfat plain Greek yogurt
- 2 teaspoons honey
- 1/4 teaspoon curry powder
- 1/4 teaspoon ground cumin
- 1/2 lemon, juiced
- Whisk together all ingredients in a serving bowl.
