These Whipped Cottage Cheese Rice Cakes are perfect for a quick lunch, an easy snack, or anytime you want something light, crunchy, and satisfying.
Ingredients
- 1 Fresh Express® Sunflower Crisp Chopped Salad Kit™
- 16 oz. cottage cheese
- 4-6 Rice cakes
Instructions
- Add the cottage cheese to a blender or food processor and blend until completely smooth and fluffy.
- Spoon a generous layer of the whipped cottage cheese over each rice cake.
- Prepare the Fresh Express® Sunflower Crisp Chopped Salad Kit™ according to the package instructions.
- Top each rice cake with the tossed salad.
