This vibrant bowl starts with the Fresh Express® Orange Sesame Chopped Salad Kit and layers on bold Cajun-style shrimp, charred corn, creamy avocado and fresh orange segments. Finished with the kit's zesty citrus vinaigrette and crunchy toppings, every bite delivers the perfect balance of fresh, savory and satisfying flavors. It's an easy, restaurant-inspired meal that's perfect for summer.Â
Ingredients
- 1 bag Fresh Express® Orange Sesame Chopped Salad KitÂ
- 1 lb. shrimp, peeled and deveinedÂ
- 1 tbsp Cajun seasoningÂ
- 4 tbsp butter, dividedÂ
- 1 cup cooked white riceÂ
- 1 avocado, slicedÂ
- 1 can corn, drainedÂ
- 1 orange or mandarin, segmentedÂ
Instructions
- Prepare the Fresh Express® Orange Sesame Chopped Salad Kit according to package directions. Combine the salad kit with the included crunchy toppings and dressing, then toss until evenly coated. Set aside.
- Season the shrimp with Cajun seasoning. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the shrimp and cook for approximately 2-3 minutes per side, or until fully cooked and lightly golden.Â
- In a separate skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the corn and cook for 3-5 minutes, stirring occasionally, until lightly charred.Â
- To assemble, divide the cooked white rice among serving bowls. Top with the Fresh Express® Orange Sesame Chopped Salad, Cajun shrimp, charred corn, avocado slices, and fresh orange segments.Â
