  • Combine the coconut curry sauce, turkey, peas and carrots in a medium-sized saucepan. Cook, covered, over medium heat for 5 to 8 minutes or until heated through.
  • Place the greens from the Fresh Express® Thai ‘N’ Cashews Chopped Kits® into a large bowl; toss with salad dressings. Add toppings; toss to combine.
  • Place rice down the middle of the bowls; top with turkey curry. Arrange the Thai ‘N’ Cashews salad on both sides of the turkey curry.
