St. Patrick’s Day Pork Sandwich with Creamy Truffle Caesar

Ingredients
- 1 (9.8-ounce) package Fresh Express® Twisted Caesar Creamy Truffle Caesar Chopped Salad Kit®
- 2 pounds boneless skinless pork chops
- 2 tablespoons canola oil
- 4 tablespoons Italian seasoning
- 1 red onion
- 4 long sandwich rolls
Instructions
- Preheat a pan on the stove to medium-high heat, while pan is heating, season pork chops with Italian seasoning.
- When pan is hot, add oil and pork chops. Cook the pork chops, turning them halfway through, until they reach a minimum internal temperature of 145°F (about 6-8 minutes per side depending on thickness).
- Once the pork chops are cooked through, remove them from the pan and set aside to rest for a few minutes. After resting, slice the pork into strips.
- While the pork is resting, peel and slice the onion.
- In the same pan, sauté the onion until translucent, about 5 minutes. Set aside.
- In a large bowl, combine the lettuce, dressing, croutons, and cheese from the Creamy Truffle Caesar Salad Kit.
- Toast the buns in the pan until they are golden brown and set aside.
- Build the sandwiches by placing the sliced pork on the bottom half of each toasted bun. Top the pork with the prepared Creamy Truffle Caesar salad mixture and sautéed onions. Finish with the top half of the bun and serve immediately.
