Charred Broccolini & Asian Chopped Salad Recipe

The simple combination of lightly charred broccolini and honey-coated caramelized carrots give this chopped salad delicious flavor.

Ingredients:

  • 6 Heads Broccolini
  • 1 Tbsp. Olive Oil
  • To Taste Kosher Salt
  • 1 Tbsp Olive Oil
  • 1 Cup Snap Peas, Cleaned
  • To Taste Kosher Salt
  • To Taste Ground Black Pepper
  • 1 ½ tsp Olive Oil
  • 1 Cup Carrots Julienne
  • 2 Tbsp. Honey
  • To Taste Kosher Salt
  • To Taste Ground Black Pepper
  • 1 Fresh Express Asian Chopped Kit
  • 1 ½ Tbsp. Micro Greens
  • 1 Tbsp. Toasted White Sesame Seeds
  • 1/2 Cup Baby Radish Matchsticks

Instructions:

  • Pre-heat grill to medium high heat.
  • Toss broccoli with the oil and kosher salt.
  • Grill broccolini. Lightly char the broccolini about 2 minutes per side. Remove and chill until you are ready to make the salad.
  • Heat a medium sauté pan over medium heat.
  • Add oil to the pan. Once the oil is shimmering, add the snap peas.
  • Toss the peas with salt and pepper.
  • Allow to sauté for about 4 minutes; occasionally toss the peas to allow for even cooking.
  • In another small sauté pan, heat pan over medium heat.
  • Add oil to the pan, heat oil again until it begins to shimmer.
  • Add carrots to the pan with the honey, salt and pepper.
  • Toss carrots occasionally and let them caramelize completely.
  • Remove carrots and let cool.
  • In a medium size mixing bowl, toss the Fresh Express Asian Chopped Kit with the master pack ingredients and the given salad dressing.
  • Plate each salad separately. Atop each salad, evenly distribute the broccolini and the caramelized carrots.
  • Garnish each salad with a nice pile of pea tendrils, and radishes. Sprinkled the toasted sesame seeds over each portion.
