Twisted Pesto Caesar Caprese Sliders

Ingredients
  

  • 1 package (10.0-ounces) Fresh Express® Twisted Pesto Caesar Chopped Salad
  • 1 package brioche slider buns 
  • 2 large tomatoes, sliced
  • 1 pound fresh mozzarella, sliced
  • ¼ lb. fresh basil
  • 3 tablespoons butter, melted
  • 2 tablespoons balsamic reduction/glaze
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Preheat oven to 350°F.
  • Remove brioche slider rolls from packaging and cut open. Place into a 9"x13" casserole dish next to each other. 
  • Pick the basil from its stems. Rinse the basil leaves under cold water and pat dry with paper towels.
  • Layer the tomato slices over the bottom half of the rolls. Top with basil leaves, then add the mozzarella slices.
  • Drizzle the mozzarella with extra virgin olive oil, then sprinkle evenly with salt and pepper. Place the top half of the rolls over the sliders.
  • Open the Fresh Express® Twisted Pesto Caesar Chopped Salad Kit. Place the lettuce and shredded parmesan in a mixing bowl. Set the dressing aside. Remove the croutons and crush them into small breadcrumbs.
  • In a small bowl, combine the melted butter, crushed croutons, and minced garlic. Spread the mixture evenly over the tops of the slider rolls.
  • Cover the baking dish with aluminum foil and bake for 10 to 12 minutes, or until the cheese begins to melt. Remove the foil and bake for another 2 to 3 minutes, or until the tops of the rolls are lightly toasted. Remove from the oven and let cool slightly.
  • While the sliders cool, add the dressing to the lettuce and parmesan. Toss until evenly coated.
  • Carefully lift the top buns. Add the dressed salad over the melted mozzarella, then drizzle with balsamic glaze. Replace the top buns and cut into 12 pieces. Serve warm and enjoy!

Chef Tips:

  • Salt the tomato slices and let them sit on a paper towel for 5 minutes before assembling to prevent soggy buns.
  • Layer the basil between the tomato slices and mozzarella to protect the herbs from heat damage.
