Ginger-infused Cod with Orange Sesame Salad
Flaky ginger-infused baked cod served over the refreshing Fresh Express® Orange Sesame Chopped Kit – a bright, feel-good weeknight dinner that comes together fast.
Ingredients
- 1 (11.5-ounce) package Fresh Express® Orange Sesame Chopped Kit
- 4 cod fillets, 4–6 ounces each, patted dry
For the marinade:
- 2 tbsp soy sauce
- 2 tbsp fresh orange juice
- 1 tbsp finely grated ginger
Instructions
- Whisk all marinade ingredients together. Add 4 cod fillets (patted very dry).
- Marinate 15-30 min in the fridge.
- Heat oven to 400°F. Line a tray with parchment.
- Lift fish from marinade and place on the tray.
- Bake for 10-12 minutes until it flakes easily. For a glossy finish, simmer leftover marinade 1-2 minutes and brush on the hot fish.
- Prepare the Fresh Express® Orange Sesame Chopped Kit by adding the greens to a large bowl. Drizzle the dressing over the greens and toss to lightly coat. Sprinkle with included toppings.
- Plate salad, top with cod pieces and enjoy!
