Crisp spiral-cut cucumbers meet the vibrant crunch of Fresh Express® Asian Chopped Salad, all tossed in a savory-sweet marinade of soy, garlic, sesame, and a kick of chili oil. Ingredients
- 1 bag Fresh Express® Asian Chopped Salad Kit™
- 6 mini cucumbers
- 1 pair of wooden chopsticks
- 2 tsp salt
- 1 tbsp soy sauce
- 2 cloves cloves garlic (minced)
- 1 tbsp rice vinegar
- 1 tbsp chili oil
- 1 tbsp white granulated sugar
- 1 tsp sesame oil
- 1 tsp sesame seeds
Instructions
- Place chopsticks along either side of the cucumbers and make thin diagonal slices down the cucumber. Flip the cucumber over and repeat on the other side.
- Place the 6 spiralized cucumbers into a bowl with the salt and place something heavy on top of the cucumbers for 10 minutes to extract as much water as possible.
- In a separate bowl, combine the Fresh Express® Asian Chopped Salad dressing packet, soy sauce, garlic, rice vinegar, chili oil, sugar, sesame oil, and sesame seeds and whisk until combined.
- Combine the rest of the Fresh Express Asian Chopped Salad mix with the pressed cucumbers and marinade, and let sit. Add in Fresh Express wonton strips and sliced almonds before serving.
