Salmon Garden Delight

Make a garden fresh salad by combining the Fresh Express® Iceberg Garden Salad Blend, salmon, edamame, tomatoes, and radishes.

Ingredients
  

  • 1 (12-ounce) package Fresh Express® Iceberg Garden Salad Blend
  • 2 cups fresh pineapple chunks
  • 1 (10-ounce) package cherry tomatoes, cut in half
  • 1 cup cooked, shelled edamame
  • 3/4 cup sliced radishes
  • 4 salmon fillets (about 6 ounces each), cooked

Orange Sesame Vinaigrette Ingredients (makes 1-1/4 cups):

  • 1/4 cup rice vinegar
  • 1 teaspoon soy sauce
  • Juice from one fresh lemon
  • Zest & juice from one fresh orange
  • 1/2 cup toasted sesame oil
  • 2 tablespoons cilantro, minced
  • 2 tablespoons fresh sweet onion, minced
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions
 

  • Place Fresh Express® Iceberg Garden Salad Blend in a large bowl; add pineapple, tomatoes, edamame, and radishes. Drizzle with desired amount of dressing; toss to coat.
  • Arrange salad on four plates; top with salmon.

Orange Sesame Vinaigrette Instructions:

  • Whisk all ingredients in a bowl. Cover and refrigerate for 30 minutes to allow flavors to develop. Refrigerate remaining dressing for up to two weeks.
