Honey Dijon Potato & Greens Salad
Add some French charm to your table by serving up this delicious Honey Dijon Potato & Greens Salad made with the Fresh Express® French Bistro Chopped Kit®.
Ingredients
- 1 (10.2-ounce) package Fresh Express® French Bistro Chopped Kit®
 - 1 pound petite gold potatoes, quartered
 - 2 tablespoons mayonnaise
 - 1 teaspoon dill weed
 - 1/2 teaspoon salt
 - 1/4 teaspoon pepper
 - 4 hard cooked eggs, peeled, chopped
 - 1/2 cup diced celery
 - 1/2 cup cooked green peas
 
Instructions
- Place the potatoes in a large saucepan of water. Bring to a boil over medium-high heat; reduce to a simmer. Cook for 15 minutes or until potatoes are tender; drain well. Cool to room temperature.
 - Mix the salad dressing from the Fresh Express® French Bistro Chopped Kit®, mayonnaise, dill weed, salt and pepper in a large bowl. Add the potatoes, eggs, celery, and peas; toss to coat. Refrigerate for at least 1 hour or until cold.
 - Add the greens from the Fresh Express® French Bistro Chopped Kit® to the potato mixture; carefully mix. Top with the croutons and cheese.
