Recipe by Nicole Keshishian – Shredded Delicata Squash & Crispy Quinoa Salad
This Shredded Delicata Squash & Crispy Quinoa Salad is loaded to perfection and the perfect cozy meal. The base is the beautiful Fresh Express® Spring Mix Blend. The salad is topped with roasted shredded delicata squash and crispy quinoa for crunch, texture, and flavor, all tossed in a delicious herbaceous dressing.

Salad:
- 2 (5-ounce) packages Fresh Express® Spring Mix Blend
- 1 delicata squash, halved, seeds removed and shredded (1 1/2 cups)
- 1 cup cooked quinoa
- 1 cup pomegranate arils
- ¾ cup feta cheese, crumbled
- ½ cup pickled onions
- ½ cup golden raisins
- 3 tb olive oil, divided
- Salt & pepper
Dressing:
- ⅓ cup olive oil
- 3 tablespoons maple syrup
- 3 tablespoons red wine vinegar
- 2 teaspoons dijon mustard
- ½ cup greek yogurt
- 2 tablespoon lemon juice
- 2 cloves garlic
- 1 teaspoons kosher salt
- ½ teaspoons black pepper
- ¼ cup parsley
Preheat oven to 375F.
Shred delicata squash using a mandolin. Add to a baking sheet in a single layer. Toss with olive oil, salt & pepper, and bake for 15 minutes until the edges are golden and crispy.
Toss cooked quinoa with olive oil, salt & pepper and spread in a single layer on a baking sheet. Bake for 25 minutes, tossing halfway through, then remove from the oven.
Make the dressing by adding all the dressing ingredients to a blender and blending until smooth.
Build the salad. In a large bowl, add the Fresh Express® Spring Mix Blend, followed by all the salad toppings - squash, quinoa, feta, pomegranate, raisins, and pickled onions. Toss with dressing and enjoy immediately.
