Paprika-Butter Shrimp Soba Noodle Bowl

Tender soba noodles are tossed together with the Fresh Express® Southwest Chopped Kit™, shredded cucumbers, and succulent paprika-butter shrimp. This quick and easy dish is then garnished with cilantro and crushed peanuts, resulting in a beautiful, delicious, and satisfying meal.

Ingredients
  

  • 1 (12.5-ounce) bag Fresh Express® Southwest Chopped Kit™
  • 2 tablespoons unsalted butter
  • 1 teaspoon smoked paprika
  • Kosher salt
  • Ground black pepper
  • 1 pound large shrimp, peeled and deveined
  • 6 ounces dry soba buckwheat noodles, cooked according to package directions
  • 2 Persian cucumbers, very thinly sliced 
  • ¼ cup crushed peanuts
  • ¼ cup chopped cilantro (stems and leaves)

Instructions
 

  • In a large skillet over medium heat, melt the butter. Stir in the paprika and a pinch of salt and ground black pepper. Add the shrimp and cook until opaque, about 3-4 minutes, stirring occasionally.
  • In a large bowl, toss together the soba noodles, all the contents of the Fresh Express® Southwest Chopped Kit™, and the cucumbers.
  • Divide into serving bowls and garnish each serving with crushed peanuts and cilantro. Enjoy!
