Earthily sweet pumpkin and hearty black beans are transformed into a smoky, hand-mashed patty with a hint of chipotle heat. Finished with tangy feta and the sharp, creamy crunch of a chipotle cheddar salad, this burger is a soulful, texture-rich bite that feels both cozy and vibrantly bold.
1 tablespoon chipotle pepper in adobo, rinsed and diced
1 tablespoon neutral oil
1.5teaspoon salt
1/2teaspoon ground ginger
1/4 teaspoon pepper
2cloves garlic, minced
1 egg
Instructions
Bake black beans in a 350°F oven for 15 minutes to slightly dehydrate. Mix pumpkin puree, cooled black beans, diced chipotle peppers, and garlic in a large bowl.
Mash the black beans with the back of a fork until about half are left whole. Add egg, panko, ginger, salt and pepper into the bowl and mix until well combined.
Divide the mixture into thirds and shape into hamburger patties. Place in the refrigerator for 10-15 minutes to set.
Heat a 12" pan over medium heat. Add oil and fry patty for 5-7 minutes on each side, adding 0.5 oz of feta on top near the end.
In a separate bowl, mix together the contents of Fresh Express® Chipotle Cheddar Chopped Salad Kit and set aside.
Place pumpkin burgers on bottom bun, top with mixed salad and top bun. Serve warm and enjoy!
Chef Tips:
Don’t skip baking the black beans! This is crucial in creating the firm, meaty texture instead of being mushy.
Aim for a 50/50 split when mashing the black beans to create a visual appeal while adding stability to the burger.
