Golden, pan-seared chicken thighs are finished with a rich red wine and cherry glaze that balances deep fruit notes with a touch of honeyed sweetness. Heat oil in an oven-safe skillet over medium heat. Pat the chicken thighs dry with a paper towel. Season with 1/4 teaspoon salt.
Sear chicken, skin-side down, for about 7-8 minutes or until skin is golden brown. Turn the thighs over and place pan in the oven for about 10-15 minutes until the internal temperature reaches 165°F.
Melt butter in a small sauce pan over medium heat. Add shallots and cook until soft, about a minute.
Add garlic and continue to sauté until aromatic, about 30 seconds. Stir in cherries, red wine, honey, orange juice, soy sauce, and apple cider vinegar, cooking until the cherries are soft and the liquid is syrupy, about 7-8 minutes. Be careful not to scorch the sauce as it nears completion. Finish the sauce with 1/8 teaspoon each of salt and black pepper. Set aside and keep warm.
In a bowl, empty the contents of the Fresh Express® French Blue Cheese salad kit, including the toppings and dressing. Mix well and set aside.
Place chicken thigh onto the plate. Spoon the salted cherry sauce over the chicken thighs and serve with a helping of salad.
