shrimp,
peeled and deveined

red jalapeño peppers,
cored, seeded, sliced

olive oil

chopped fresh cilantro

tablespoons
chopped mint leaves

cup
unsalted, roasted peanuts,
chopped
Dressing Ingredients:

coconut milk
1
cup
unsalted, roasted peanuts
1/2
cup
seasoned rice vinegar
1/4
cup
unsweetened flaked coconut

tablespoons
brown sugar

tablespoons
fish sauce
1
tablespoon
lime juice
1
tablespoon
reduced-sodium soy sauce
1
clove garlic
1
teaspoon
sesame oil
Salt and pepper to taste
Instructions
Stir fry shrimp and peppers in olive oil in a large skillet over medium heat for 5 minutes or until they are pink.
Combine the Fresh Express® 3 Color Coleslaw™, cilantro, and mint in a large bowl. Drizzle with Thai peanut dressing; toss to coat.
Divide slaw evenly into four bowls; top each with four cooked shrimp and peppers. Sprinkle with peanuts.
Dressing Instructions:
Process all ingredients in a blender until smooth.
