Fresh Express® American Salad Mix

chopped cooked chicken

red bell pepper,
chopped

cherry tomatoes,
halved

cooked brown or white rice

black beans,
rinsed and drained
1
cup
shredded cheddar cheese
Dressing Ingredients:
1/2
cup
prepared salsa
1/2
teaspoon
cumin
1/4
teaspoon
chili powder

tablespoons
red onion,
finely chopped
2
tablespoons
minced fresh cilantro
1
tablespoon
lime juice
1
tablespoon
balsamic vinegar
1
teaspoon
Dijon mustard
1/4
teaspoon
salt
Instructions
Place the Fresh Express® American Salad Mix, chicken, red pepper, and tomatoes in a large bowl. Drizzle with the dressing; toss to coat.
Arrange the rice and black beans in four bowls. Top with salad mix; sprinkle with cheese.
Dressing Instructions:
Whisk all ingredients in a small bowl.
Add a small amount of water to thin if using a thick salsa.
