Honey Dijon Potato & Greens Salad

Ingredients
  

  • 1 (10.2-ounce) package Fresh Express® French Bistro Chopped Kit®
  • 1 pound petite gold potatoes, quartered
  • 2 tablespoons mayonnaise
  • 1 teaspoon dill weed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 hard cooked eggs, peeled, chopped
  • 1/2 cup diced celery
  • 1/2 cup cooked green peas

Instructions
 

  • Place the potatoes in a large saucepan of water. Bring to a boil over medium-high heat; reduce to a simmer. Cook for 15 minutes or until potatoes are tender; drain well. Cool to room temperature.
  • Mix the salad dressing from the Fresh Express® French Bistro Chopped Kit®, mayonnaise, dill weed, salt and pepper in a large bowl. Add the potatoes, eggs, celery, and peas; toss to coat. Refrigerate for at least 1 hour or until cold.
  • Add the greens from the Fresh Express® French Bistro Chopped Kit® to the potato mixture; carefully mix. Top with the croutons and cheese.
