Pineapple Candle Salad

This special occasion fruit salad makes a nice presentation on your table and the Fresh Express® Butter Supreme blend makes a nice base for the assorted fruits.

Ingredients
  

  • 2 (5-ounce) packages Fresh Express® Butter Supreme
  • 1 whole pineapple
  • 1 (10.5-ounce) can mandarin oranges, drained
  • 1 (6-ounce) package raspberries
  • 1/3 cup pistachios
  • Raspberry vinaigrette

Instructions
 

  • Cut the peel off the pineapple; cut into ½-inch thick rounds. Using a 1-1/2-inch diameter round cookie cutter, cut 27 circles from the pineapple rounds. Cut the remaining pineapple into small wedges; reserve.
  • Arrange the Fresh Express® Butter Supreme lettuce on a large oval platter.
  • To build the candles, make 3 stacks of 9 pineapple rings. Place in a row down the center of the platter. To make the flames, place a toothpick through three mandarin oranges and place on top of the pineapple.
  • Top the lettuce with the reserved pineapple wedges, mandarin oranges, raspberries, and pistachios.
  • Serve with Raspberry vinaigrette.
