Heat oven to 425°F. Combine the potatoes and onion in a bowl; drizzle with olive oil and toss to coat. Sprinkle with salt and pepper; toss to combine. Spread in a single layer on a baking sheet, cut side down.
Roast, stirring once halfway through, for 40 to 45 minutes or until the potatoes are tender. Set aside to cool to room temperature.
