To celebrate Earth Day, create this pretty garden scene using Fresh Express® Spring Mix, a cucumber, zucchini, yellow pepper, radish, and shredded carrots.
1small cucumber,cut in half lengthwise, then cut into thin slices
10-12zucchini rounds
1celery stalk,cut lengthwise into 3 slices
1cherry tomato
2radishes,sliced thin, cut in half
1/4cupshredded carrots
Lemon Vinaigrette Ingredients:
1/2cupolive oil
1/2teaspoonlemon zest
1/4cupfresh lemon juice
1/2teaspoonminced garlic
1/2teaspoondried thyme
1teaspoonhoney
Salt and pepper to taste
Instructions
Arrange the greens from the Fresh Express® Spring Mix on a large rectangular platter.
To make the sun:
Cut off the ends of the bell pepper; remove the ribs and seeds. Place pepper skin side down and cut out a round shape. Next cut 7-8 triangle shapes. Create the sun by placing the triangles around the circle, placing it in the top center of the platter.
To make the flowers:
Arrange the cucumber slices in concentric circles, stacking them to build height. Bend and twist two slices to create a petal and place in the center. Use a celery stalk as the stem.
Place the zucchini slices in a circle, stacking them in offsetting rows to create the petals. Place a cherry tomato in the center. Use a celery stalk as the stem.
Arrange the radish slices in a circle, overlapping slices to create a pinwheel shape. Cut celery stalk in half and use as the stem. Repeat to make a second flower.
Arrange the shredded carrots across the bottom of the platter to create groupings of grass.
Serve the salad with Lemon Vinaigrette on the side.
