Greens, Eggs & Ham Casserole

This delicious and nutritious egg and greens dish will become a family favorite to serve for breakfast or brunch.

Ingredients
  

  • 2 (5-ounce) packages Fresh Express® Baby Kale Mix
  • 1 (8-ounce) loaf country-style bread, torn into 2-inch pieces
  • 1 clove garlic, minced
  • 2 tablespoons olive oil, divided
  • 1-1/2 cups heavy cream
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced ham
  • 3/4 cup roasted red pepper strips, drained
  • 6 eggs

Instructions
 

  • Heat oven to 375°F.
  • Bake bread on a baking sheet for 22 to 25 minutes or until golden brown; cool slightly. Place into a 13x9x2-inch baking dish.
  • Cook Fresh Express® Baby Kale Mix and garlic, in batches, in olive oil in a large skillet for 2 to 3 minutes or until wilted; cool slightly.
  • Mix cream, Parmesan cheese, Italian seasoning, salt, and pepper in a large bowl. Add the cooked greens, ham, and red pepper; mix well.
  • Spoon greens evenly over croutons, allowing about a third of the croutons to remain visible. Using a spoon, create six “bowls” in the greens; place a cracked egg into each one.
  • Bake casserole for 40 to 45 minutes, rotating baking dish midway through, until the egg whites are set. Cool slightly.
