1(8-ounce)loaf country-style bread,torn into 2-inch pieces

2tablespoonsolive oil,divided
1-1/2 cupsheavy cream
1/2 cupshredded Parmesan cheese
1teaspoonItalian seasoning

1cupdiced ham
3/4cuproasted red pepper strips,drained

Instructions
Heat oven to 375°F.
Bake bread on a baking sheet for 22 to 25 minutes or until golden brown; cool slightly. Place into a 13x9x2-inch baking dish.
Cook Fresh Express® Baby Kale Mix and garlic, in batches, in olive oil in a large skillet for 2 to 3 minutes or until wilted; cool slightly.
Mix cream, Parmesan cheese, Italian seasoning, salt, and pepper in a large bowl. Add the cooked greens, ham, and red pepper; mix well.
Spoon greens evenly over croutons, allowing about a third of the croutons to remain visible. Using a spoon, create six “bowls” in the greens; place a cracked egg into each one.
Bake casserole for 40 to 45 minutes, rotating baking dish midway through, until the egg whites are set. Cool slightly.
