Grilled Vegetable Italian Salad
The Fresh Express® Italian Balsamic Salad Kit® makes the perfect base to serve your favorite grilled vegetables on for an alfresco meal.
- 2 packages Fresh Express® Italian Balsamic Salad Kits® (10.5-ounce)
- 8 ounces asparagus trimmed
- 1 red bell pepper cored, seeded and cut into 1-inch wide slices
- 1 yellow bell pepper cored, seeded and cut into 1-inch wide slices
- 1 orange bell pepper cored, seeded and cut into 1-inch wide slices
- 1 zucchini sliced
- 1/3 cup olive oil
- Salt and pepper to taste
Heat an outdoor or indoor grill to medium-high. Working in batches, drizzle the vegetables with oil. Grill them in batches for 6 to 8 minutes, turning once, or until charred and tender. Sprinkle with salt and pepper; cool slightly.
Arrange the greens from the two Fresh Express® Italian Balsamic Salad Kits® on a platter. Top with the grilled vegetables. Sprinkle with the cheese and croutons from the salad kits. Serve with the dressings from the salad kits on the side.
